与面包对话

又是我的其中一首励志歌,Go the Distance。
Disney Hercules里的一其中首歌,是Hercules去寻找自己身世时唱的歌。
词里的your arms指的是雷神zeus的臂膀。
在麦可思的苦日子,全靠他不少。
现在念甜点,更是觉得贴切。
有再多困难,距离我的目标再遥远,我也会走下去滴~

第二周周五,引颈期盼的面包课。
(这学期后,我的颈定长了许多)
这天做脆皮面包,crusty bread:Pasta Dura & Vienna。

用的是同一个面团,形状不同罢了。全班共用的面团,又是很壮观的一大份。
怎么做脆皮的面包呢?一是加些semolina(较粗的小麦粉),semolina能帮面包增加脆度。二是以低温长时间烘焙,让面包外层变干,内里仍湿润。

休息,分割,整形。Pasta dura是圆筒形,vienna前一周也做过了。

发酵后的pasta dura。我喜番滚圆滴~看着就很想抱回家当抱枕。

发酵完成的维也纳面包,撒些面粉,接着在他们脸上划3条斜线。相信我,这不是毁容。一时的痛苦算不了什么,烤好后给他们照镜子,他们定会感谢我。

发酵完成的pasta dura,直接狠狠地在胸膛给他们一刀。

偶滴。。。切得太斯文了,而且犹豫再三,裂痕开得不漂亮。这切裂痕的诀窍是,用把利刀,快狠准,切个0.5厘米深的缝,拿开出来的裂缝才会漂亮。又一菜鸟失败之作~

加上一篮子的维也纳面包。

刚烤出来的面包,在篮子里噼噼啪啪响个不停。保罗老师让咱们幻想,那是面包正在和咱对话。(嗯,又喂Bob,又和面包对话,难怪花说咱们都是有病的一群。。。)其实那噼噼啪啪的声响是来自从烤箱出来的面包骤然遇上冷空气,正急速收缩的声音。不过,这么听着还挺过瘾,想像一下,闻着面包香,听着面包对话,多幸福!
凉后保罗老师给咱们试吃,外脆内软的面包,没两下子风卷残云,两个大面包已经在大家的肚子里啦! 老外爱抹牛油吃,我却喜欢吃面包的原味。不然哪对得起辛勤劳作,壮烈牺牲的酵母,和原来的麦香味儿呢?

昨天阿贤介绍一个很执着的法国面包师傅,烘出的面包,正如女儿所说的,香喷喷脆卜卜的,闻到都感到幸福哦~~
