I'd call it a small success - Raspberry Orange Muffins~ Why am I being so humble to call it "small success"? The muffins smell really great fresh from oven, and for the few mins, I thought I had success! But then....fer's comment after her first bite: why is it tasteless? She comments that I should add some vanilla essence in it... I'd already told her beforehand that these muffins wouldn't have the butter fragrance. But it actually ended up that it's just totally flavourless, with a very slight hint of sweetness at the end (*shy*)Err....I'd blame it on the lack of butter in the recipe =P I thought orange zest and orange juice blended with raspberry would make a good flavour. To further complicate the flavour, I added honey to substitute some of the sugar. It still didn't work T.T Ish, I should just substitute any oils (I used canola oil) with butter next time! Another complain: the frozen raspberry I used were too acidic! Nevertheless, the muffins are really pretty~! I was worried that they would be too dry like the lemon butter cake(since I wouldn't know the baking temperature), I thought of putting a small bowl of hot water in the oven to raise the moisture content. But it turned out to be quite moist, with a slightly crispy surface~(And hence, a small success! ^^)
